The control of temperature and humidity are two fundamental elements to obtain an adequate maturation of our meat.

We work exclusively with animals from this small region and the north of Portugal due to the special conditions of this region, characterized by its climate, which directly influences the quality of the pastures in which the cows live.

Selection

We make a manual selection of each animal to always obtain the best quality.

We are pleased to work with a product that for many is “the best in the world”. Inspired by these words, we manually select the best specimens from Galicia and the north of Portugal, either live or already in the slaughterhouse, but always making a selection “in situ” to obtain the best quality.
